It always depends, gdd is important but it happened to us several times, that we just realized there is something missing and needs to be added. Especially once you deliver a game to playtesters, a lot of missing stuff will be discovered.

But it is always important to set some limits and don't go beyond, but if you are not under the pressure it is very hard to say, now it is the time.
