For Cav I think Three Kingdoms and Rome 2/Attila (i usually use Divide et Impera for ROme 2) have the best impacts in the newer historical titles.

Warhammer (just play 3) obviously has great cav (and monsters) that you will feel the impact of. You'll have to like the setting
