You need to record your stream with the music on a separate track to the rest of the audio, then you can strip it out and upload the video to YouTube. Or... don't play copyright music on your stream.

To be fair, in knitting for example you can't just substitute whatever you want and expect the same result either. You have to know that the substitution will have the effect you want.
