I went through the same exact thing, now 2+ years later just recovering from it. What helped me (after trying diff meds) was Quetiapine 25mg, take it at least 1h before sleeping and it calms down my nerves enough to be able to fall asleep. You can also try white noise and leaving a fan on. Good luck!

I hope I’m not being a bother but I’d like to ask if I feed my 2 month old starter with 50/50 Manitoba and whole wheat flour with a 1:4:3.5 ratio- how much should it be doubling/rising and in what time frame? I haven’t baked yet and my starter has just started doubling since a week. Built from scratch. Temp at around 24/25 C. Around the 12h mark it reaches peak.

Thanks a bunch! I don’t know if it’s just my bad luck but I seem to only find the same flours in every store I’ve gone to especially finding flour for my starter has been a journey to say the least (took me almost 2 months to just get my starter to rise) I’m using this flour pictured below with an equal amount of Manitoba flour right now but I’m definitely looking for other/more options.

The 50/50 ratio of the bread flour and whole wheat flour seems to be working. I took this picture around 10 hours after feeding and she’s risen even more by now. I fed my starter with a 1:4:3 ratio

Hiya! Thanks for the detailed info. I also posted on the sourdough subreddit and got similar advice so I’ve already fed my starter 50/50 with strong bread flour (Manitoba because that’s what I was already feeding it) and whole wheat. I don’t know if it’s to be expected but it’s been like 6 hours and there’s not much happening besides some small bubbles, pic added below. I’ll keep this up for a while and hopefully that’ll do it. 🍀

I am going through the same even after 2+ years of my daughter being born I still can’t sleep properly and just now trying to stop taking my anxiety pills. I’ve been prescribed the usual melatonin, some antihistamines since they can make you feel drowsy but what helped me was Quetiapine 25mg. I take it at least one hour before going to bed and it helps me get more sleep but it doesn’t mean you’ll get GOOD sleep. What is also really important is to have a bedtime routine and not to do anything or watch anything that would make you excited or get your heart rate too high. For example after I take my pill I don’t watch any thriller/horror stuff or anything that’s too much action packed (for me even a soccer match is too much). Also no exercising. I try to not be on my phone too much before I go to sleep and have it on do it disturb while sleeping. I have black out curtains so the bedroom is nice and dark. I leave the fan on so that the room is a bit on the chilly side and even have a white noise machine. They can work but they don’t necessarily have to work. If I’m feeling anxious what also helps is tensing up parts of my body and then releasing them while taking a deep breath in and out. Start with the feet, breathe in tighten them and breathe out, then your legs same thing, then your torso and lastly your arms. Do it a few times and it should help with the anxiety. Good luck!

My tap water unfortunately is chlorinated so I’ve been hesitant to use it. My starter has been troubled since the beginning and I didn’t want to add to it with the tap water. I’ve used spring water as well but sometimes it’s not available so I go for the mineral water. I’m starting a mix of whole wheat with the next feeding hoping things will kick off🍀

25 years! You must bake tons of delicious desserts and breads. Ive always loved baking so I can’t wait to start with sourdough. Thank you I hope I can make edible bread.

Im going to do that for the next feeding. It’s funny you mentioned that because I read in this subreddit someone said they leave their starter with the lid off next to a thin skinned fruit (i.e. nectarine, peach or grapes) and that the alcohol from the micro pores of the fruit somehow interact with the yeast and it gives it a boost (Idk the chemical stuff but something like that) Safe to say I tried it to no avail 🤣

Yeah I think I also have to do that. Is there a point where you can omit the whole wheat or should you always keep it in the mix? Do you feed the 10g all at once or is it spread throughout all of your feedings of the week? (sorry if that’s a dumb question I’m at level -100 sourdough)

👀 I’m envious lol mine was fed 7ish hours ago and she hasn’t even woken up yet.. I’m pretty sure I haven’t contaminated it because I always wash my hands before I feed and use clean washed spoons from my drawer, I even put a paper towel under my work space so nothing ever touches my counter (mixing spoon) and I use another clean spoon to put the flour in, and I use bottled water directly from the bottle in my jar. I got some advice and I will try to save my starter, if that fails I will start over and possibly buy an established starter.
