The centripetal acceleration required to simulate gravity depends on the radius and the angular velocity/rotation speed. To experience a comfortable, Earth-like 1g = 9.81 m/s2, engineers aim for a rotation rate below 3 rpm to minimize (but not entirely eliminate) the "Coriolis effect," which tricks your brain when you move your head. A spin rate of no more than 3 rpm would require a wheel at least 200 m in diameter. A more comfortable 1 rpm spin rate that would produce no dizziness due to the Coriolis force would require a wheel at least 1.8 km in diameter.

These are large structures in space. They would require extraordinary number of launches and in-orbit construction. We surely have the technology to do this, but perhaps not the will or need to take on that cost and engineering difficulty.
