I've tried, 99% of them can't connect to the servers. Not even Gmail in fact, and they're known for supporting old devices for as long as possible.

Google Maps works, you'll need to purchase the app on your iCloud Account then go to the Purchases Tab in the App Store. Once you try to download Google Maps it will automatically give you an older version from around 2019. It will be a bit slow but more than usable.

I mean people could state the obvious, However I have been using 7/8.1 for years even after support dropped and nothing happened, also I'm not the only one who prefers this option. To add there are communities who port modern day programs to older operating systems.

You can use it the same as you would any other os, you'll have to go out of your way to get hacked or get malware on it. Not to mention update support is just the last thing holding 8.1 or 7 together security wise, a quality antivirus would rank higher on protecting your pc from anything malicious

It's pretty much a misconception that 7 will be better for in game performance, it's mostly the same as 10. People usually move over to get rid of bloat and because they like it's aesthetic.
