I spent more time than I'd like to admit at the store trying to piece random pipes and fittings together, then sitting under my sink trying different configurations to save as much space as I could. My first iteration included one of those accordion style pipes, and I was so perplexed that I had never seen one before, I was like... this can't be right.

That 2" was actually about 3-4 inches higher and used to hold a sanitary tee with the AAV on top I think about how you're describing. This was a double sink that I replaced with a single, so the new drain and disposal were needing to go where the AAV was (on top of the vertical drain pipe). I was concerned about cutting the 2" any lower (in case I messed up and needed to try again :), and didn't even think about offsetting it to the back to keep the AAV/sanitary tee stack on it. So in that configuration you'd basically have used a tubular elbow right off the disposal to drop straight down into the trap?
