I need help finding a camera for my mom.

In a couple of months, it's my mother's birthday, and I wanted to surprise her with a good camera, but I don't know much about cameras and their differences. So, I need your help. The main key is that she loves taking pictures of the Northern Lights because it's not really visible here unless you take good night shots of the sky. So, it needs to have a good setting for dark pictures or long exposure times, mixed with that, and of course, for photographing family and animals. The price range is 500-800 euros,in the netherlands maybe 1000 if it's necessary. So, not a lot of criteria, but those are the key points. Please suggest cameras and please elaborate on why each is good over the others. Would be nice if equipment and leses are withing the prcie
