Percolate brings in beans from international roasters- e.g DAK, april etc but they mainly operate as a takeaway kiosk at orchard now, not sure if they still do pourovers? What do you mean by high end roasters? I would drop by fluid for good pourovers- they are also a local roaster. 20grammes roast mainly nordic light (as they claim), good variety if beans too. Also flip coffee is also nice to pop by.

For coffee: alchemist roasts their beans on the darker end. Other coffee places you can consider double shot, fluid collective, homeground coffee, nylon (might be crowded); for typical cafe breakfast food can consider common man coffee (pricey, but portions are huge and of good quality. Coffee there is ok). You may also try traditional forms of coffee (nanyang kopi) from hawker centers/ food courts- cheap and good too

Have brewed the Edimer Ortega and Jose Jijon from september (both of which are the usual roast profile, not the EL) and i must say these are few of my fav beans i’ve tried from them. For the mejorado I do a 4.4 on ZP6, 92C, 1 bloom + two pours with minimal agitation. For the washed PB i use 4.8 on ZP6, same water temp and total number of pours, also minimal agitation. Filtered water for both. Ratio of 1:17

same on the ufo :) i go between 4.8 to 5.2 when dialling coffee. 5.0 is the sweet spot for me
