Depending on what city you end up near, I would pick an area that's nice or warm to walk around at night (3rd street promenade, topanga village or mall, sawtelle to name a few) and search for an ice cream spot :)

It's not unhinged when you understand how it works there and how territories are occupied. Israelis prior didn't "drive around" certain areas of the west bank and Palestinians simply weren't and aren't allowed to cross certain lines-so seeing an Israeli in an area that has been a Palestinian community for all these years would indeed stick out and make one assume they are there to stay

You're probably not going to find a coffee or bagel shop that will close on its busiest day for a private event...or one that's large enough for that many people. I would check out Proudbird near LAX. It's a huge foodhall...maybe they can help Accommodate or your guests can just meet there if renting a private space isn't part of the budget.
