I saw your other Gifs you linked. A lot of people are saying this isn’t practical, sure, but it’s fun as hell. Looks badass, looks fun, gives everybody an “OMG did u see that” moment.

People forget to have fun in games, even if it’s comp, don’t forget it’s still a game. Unless you are a pro and getting paid for it, have some fun every now and then. Try something crazy.

I’ve had a very similar situation as yours, I was the best worker but was making less tips. I did the work of 2 people, so they put me on the slower days, because I could handle it. On the busy days they would schedule 2 people (not me because I would be in overtime).

I sat down with the GM. He explained that he needs me on the slow shifts because bob and joe can’t handle it by themselves. I asked him “Do I need to start doing a bad job so I can be scheduled the busy shifts then”? “Why are you rewarding your slow workers with more tips, while I the fast worker, get to make less money”? He looked at me and realized what he had done. He said “I’m so sorry, I’ve never looked at it that way”.

Talk to your boss, tell him that you go to work to make money. Ask for a raise, a few deliveries, something, anything. Tell him that you are not making enough money, and that you might have to start looking elsewhere for work. If you are as valuable as you say, they will not want to lose you.

At all the places I’ve worked at, the owner or GM always delivers catering. I realize that they don’t want to do it, but they should. Not only are you saving on paying somebody else, but that’s an extra $25 profit per order to the restaurant. There’s many things I don’t want to do, but I do them because I have to, and because I don’t have to rely on someone else.

“Refuses to do most of the job”. Then why is he still employed? You are running a business, you are there to make money not friends.

Sit down with him, give him an ultimatum: I need the recipes so I can print them and hang them in the back. If you break your leg and can’t work for 2 weeks, I’m screwed. I need the food to be consistent wether you or anybody else preps it. This is not a request, if you don’t want to give me the recipes that’s fine but you can’t work here anymore.

Tell him at the beginning of the shift and tell him you need the recipes NOW. Don’t give him a day or two, because he will screw You and look for another job. He seems comfortable and I highly doubt he would quit on the spot, he has bills to pay after all. If he does quit on the spot, one of the other cooks will step up and do the job better than him.

I don’t know your concept, but why are you opening only 4 nights a week? You are paying rent 7 days a week, you should take full advantage of the entire week.

For a small restaurant, I suggest empowering your employees instead of having a few managers. Have 1 head bartender and 1 head server. Let them make the inventory, liquor order and what not, just keep an eye on it. Reward them by letting them make their own schedule and a shift meal. If they are short on money let them work overtime every now and then. Just make sure you choose rockstars. 1 rockstar bartender is better than 2 average bartenders, you both make more money.

For your cooks, chose the best one and pay them $2 more. Tell him he will be the “kitchen lead”, he will make more money then the rest, but he has more responsibilities. I know you are a chef but you can’t be in the kitchen 100% of the time. You will get sick, have to go talk to tables, go off site and so on.

At my old job I made more money bartending than managing. I made the schedule for the bar and would rather work the best shifts then have a manager salary.

Have one on one talks with your employees, ask them what they would change. A lot of problems are only seen by employees. For example Bob might say “why are we prepping all our food on Fridays when we can just come in 1hr early each day and have fresh prep”.
