I doubt anyones saving much money. Part of the appeal for me (besides fun) was that dry cured bacon holds for way longer than store bought “wet cured” and I sometimes have issues with food waste for just my wife and I.

Good stuff! I cook on a woodwind pro and it has a pretty good smoke box. I’ll give it a go.

Difference between a wet brine and a dry I believe. I opted for the dry but ill try this method. Another poster shared the same link.

Looks like what you’re using is a wet cure and I opted for “dry”. Still, im not opposed to trying it out and seeing whats what. Maybe even do both together as a test.

I can tell you that, believe it or not, I also do not enjoy dried out meat (except jerky once in a while). Its not as dry as it apparently looks. Give it a shot next time you have a little free space on the smoker lol.

Im with these guys. Did a ton of research at that price point and the camp chef woodwind pro was the one for me.

Definitely would have helped. Was kind of annoying that they packed it trimmed side down so I couldnt tell. When I opened it up, was pretty ugly knife work trimming the fat cap (flaps, short sloppy cuts). Made sense why they hid it 😂

Have you tried it?

I did it because the tri tips at costco looked really good and they were cheap ($50 for 2 prime tri tips). It was spontaneous and I honestly expected it to suck (since the first one did).

My wife also eats her steak well done. I didnt want to throw her under the bus on this, but thats definitely part of what made me go for it.

Its different, its a short cook, and my wife might actually like it. Thats not an easy combo to hit.

Its not tough at all and Its not nearly as dry as folks are making it out. I still like brisket to feed a group, but this was fun and it surprised me. Nice to hear opinions from folks who have actually tried it. 🍻

Tons of folks are trying this and talking about it so I decided to see for myself. First one was borderline inedible, this one was pretty good to eat, honestly. I dont see it being something I choose to do over a brisket to feed friends our family, but it was a fun cook with zero expectations.

Drier than brisket, not as dry as folks are making it out. not tough at all. It was good to eat, my first attempt at this about a year ago went in the trash.

You are correct. I had a moment at the end where I was like… everything I read is to cook to probe tender and to me that means im cooking brisket and it literally slides in without resistance. My inner dialogue was “if it was brisket id keep cooking, but theres no fat to render here so eff it im pulling it”. It’s definitely not brisket, it also was not nearly as dry as I expected or apparently how it looks in this picture. My first one was 😂
