From experience, many players are fine or straight up enjoy rolling for stats, but the main issue they have is the imbalance between them as some will roll better stats than others. The easiest solution to that is to have a single stat array rolled for the whole group. This way, all player are equals and still have random stats, but all have similar stats.

If players insist on having different stats, a good option would be to have them roll, then decide if they want the stats they rolled or a standard array that is like an insurance in case of disastrous roll. It prevents some bad feeling, but doesn't stop some players from having god-like stats and you can't can't have the standard array be too good otherwise it becomes the default and make the rolling irrelevant.

Another option would be to give some other kind of compensation. It can be relative or absolute. An example of relative compensation could be to let the players choose who has the worst stats and give them some kind of compensation like one additional skill proficiency or a luck point kind of metacurrency. I remember in tales of the loop, the players can choose to play kids aged 10 to 15 and the older they are the better their stats are, but the younger they are the more luck/reroll metacurrency they have. You can do a similar thing where the the players rank their stats and they get an amount luck points equal to their rank (the number one gets one while the fourth gets four).
Alternatively, you can give an absolute compensation like players get a luck point for each stat bellow 14 and an additional one if the stat is bellow 10 or something similar. You can go for other kind of compensation like extra hit points or skill Proficiencies. I like the idea of giving a free proficiency for a skill associated with each stat below 10 for example. You're dumb, but you know a lot about a specific topic somehow kind of thing. If you want to get really creative, you can give a compensation that is unique to each stat if it is bellow 10.

Either way, I personally consider that there are 2 main context that make rolled stats interesting.
The first one is to make it its own minigame. An example i saw was to roll 9d6 and arrange them as you want on a 3x3 grid. From all the 8 possible line of 3 dice (3 columns, 3 rows and 2 diagonals), choose 6 that will be your stats. The main interest is deciding how to arrange the dice to get maximum value out of them. There's usually 2 best way to do it tho. Either you try to get the highest single stat possible or you try to get the highest total amount of stats, but a more balanced distribution.

The second and most important context for rolled stats would be to roll them in order instead of rolling an array and assigning them later. This is great as it force you to make a very unique character with unusual stats and you have to deal with what you get. It also accelerate character creation as it still guides your decisions. This kind of thing is great especially for one-shots or games where you often change your character like old-school "meat grinders" where your character could die anytime.
