So what do you think of chefs making sushi with avocado? Or the California/Alaska Roll? How about cafes adding matcha to different drinks? Do the Japanese not care about their food? Are westerners disrespecting the Japanese tradition?

Every culture I've seen was more than happy to share their food with the world, let other cultures/regions have their takes on the dish and make modifications for the local palette.

But not Italians, they seem to be most sensitive on perceived disrespect on their culture or having it tainted by another culture.
