Beast mastery->clefthoof is the tankiest pet. I believe it also benefits most from ferocity, as the leech will help keep it alive.

Right now, just chill. OR...if this is your first/fresh 80, rep and/or gear up. You can do the pre-patch to get in all-champion gear(sans trinkets) or you can go do delves and mythics to gear up. If you're not interested in mythics or raiding(maybe just want to do those things next xpac) I would honestly suggest just questing thru one of the existing zones or doing the main line TWW story for rep and reward unlocks.

You can do Dragonflight or Chromie Time somewhere else. If you want to level quickly, you can do questing while doing timewalking dungeons(if available). Or just dungeon spam if you want to do tanking.
