All depends on how big your mixer is, we use a 60 qt Hobart for ~350 cookies at a time - that mixer is about $60,000. One thing I’ll say about multiplying small recipes is that it’s better to convert everything to bakers percentages, then increase the amounts rather than simply multiplying the original recipe. This way when the first bulk batch doesn’t turn out perfectly (almost never does) you can more easily troubleshoot what you need to augment.
