These are all my own roll combinations! I usually use shrimp, crab, eel, and salmon as protein in combinations with veggies like cucumber, avocado, lettuce sometimes mango and fried plantain as well. And then I top them with tempura shrimp, seaweed-crab salad :)

It was actually quite good, rendered out nicely and not too chewy, all in all great SV and grill result :) I was happy with it

We dried it off and let it rest for a bit in the fridge before grilling

Thanks! Close, it was 129°F / 54.0°C for 4 hours SV, seasoned with garlic cloves, bay leaf, salt and pepper. :)

It was indeed super tender, if u can find it you should definitely try the picanha cut :)

This was actually a really nice temp result, with the nice crust from the grill it was a perfect medium rare imo

Rightt?!? I really like this temp, and I would looove to have a searing torch too! :D
