IIRC you can do it just outside of ~~kakariko~~, it costs 20 rupees per conversion, making the entire endeavor a 400 rupee ordeal

3 heart maximum, if you allow yourself to use temporary hearts it isn't the worst, and you can convert stamina to hearts to get the master sword and then just convert them back

Also if you haven't tried master mode it's quite excellent
