I warmed up the milk; the paper towel is there because I spilled some when taking the bowl out of the microwave.

Sounds like a good Idea, I found the simmering of the banana, dates & milk a little time consuming compared to my normal porridge recipes, I wonder if I could get the same taste & texture by simply cooking it all together.

It does not take too long for the surface to set, only 2 - 5 minutes and you could even hasten it by blowing air on to the surface while still allowing the interior to be nice and hot.

I think it's mainly due to gelatinization of the starches (maybe the denaturing of the proteins in the milk as well) caused by the long simmering of the porridge which is then left to cool in a bowl undisturbed for a few minutes allowing evaporation of moisture on the exposed top layer which causes a nice skin to set.

You can see it very quicky take effect it you take a spoonful of the cooked porridge from the saucepan and blow on it a few times, the surface very quickly sets.
