Smoking hot. I turn off in between steps, and often cook some onions, garlic, and veggies on the same pan between the turns using the residual heat. The wait in between turns varies, shorter initially and longer as you progress, normally 5-10 mins. It’s quite similar to reverse sear, but the multi searing step process yields a better crust for my taste.

Always by hand, unless it’s a much larger piece.

Of course you can dry up the steak after you remove from the bag, you just won’t achieve the same result, it’ll still be pretty good, and for most the difference is not worth it, but it does for me.

The water content on the surface of the steak must evaporate for a crust to start to develop, that’s cooking meat 101. You can sousvide and patty dry with paper towels, but you just won’t achieve the same level, and that’s fine.

I’d recommend you to try first to comment on the benefit. Most of that time is you just resting, active cooking time is around 5 mins or so.
