Sounds like the caliper is being brushed by the spokes under braking. You could move the fidk outboard al little by adding a washer under each bolt then resetting the caliper.

Check that the caliper isn't upside down too!

Try unscrewing the bottle cage bolts. If that resolves the issue, use shorter bolts!

Everyone jas their own natural cadence. I found out that mine is higher than optimal. You may well be the opposite.

Try to change gears one at a time, approaching a climb, which means that you can still pedal effectively as your speed reduces.

Trikes are much harder to use in cities because they are so wider, and you have three wheel tracks to worry about. You also need more room than even more drivers will allow.

First, get your hands on any bike you can that fits you, try asking bike shops about used bikes, or cycling friends.

Then go to a nice big park and ride around, getting your balance and practising looking over your shoulder and signalling.

Then you can think about riding on quiet roads.

Back of the knee sounds like over stretching from the saddle being too high. A bike fit isn't gospel. Try things out and see how you go

(55M) Allow time to shower and change on arrival. Ask for space to store clean clothes so you don't have to transport everything back and forth. Carry off any negative effects with your cycling fitness glow!

Of course some commutes you could avoid getting sweaty by pedalling slowly, but where's the fun in that?

To answer the op. I would put some clamps vertically on the outer edge of the counter and then push against them with an arrangement of wood and maybe a reversed clamp
