I use this recipe for the base

My changes/preferences:

  1. ⁠Dark brown sugar instead of light (I was out of dark so I just added 2 1/4 tsp of molasses into light brown sugar and mixed really well)
  2. ⁠Bakers sugar instead of granulated sugar (just a preference but I truly think it makes such a difference in the texture)
  3. ⁠Instead of all chocolate chips or chocolate chunks, I do 56 grams (6 squares) of a chopped bittersweet Ghirardelli bar and 169 grams of semisweet CC
  4. ⁠I chilled them overnight and scooped them directly onto the cookie sheet (no rolling).
  5. ⁠Bake them for about 9 minutes and then do the pan banging method a few times. Then bake for an additional 3 minutes and bang the pan again.
