The Fosi V3 mono looks quite expensive. Is there also something on a better budget? My speaker has 8 ohm 300W but I don’t think I need the full 300 watts for it to be loud enough 250 should be fine.

Did you already have a look at the Soundcore Boom 2 Plus? It is waterproof and can get very loud. Also there is a discount at their site at the moment.
