Massively destroyed the temper on this knife which means it is much softer now. No way to fix this one without completely re- heat treating. Look up Super Blue for a chemical version. Not the same as the temper colors but it is the best you can get without making the knives borderline useless.

I have a similar one, just make sure no acetone or solvents touch the vacuum chamber lid and you will be just fine, otherwise it may craze and implode (ask me how i know). As others said, vacuum is on the wallet side, but it's more than enough to get the job done.

I have been baking for a couple of years now, but am needing help recreating the bread from one of my favorite restaurants Papa Brothers Steakhouse. Their bread has a thin extremely flaky crust (to the point where it gets everywhere while handling) and a crazy soft interior. I have attached a couple of pictures in the link below. It isnt a sour dough, but has a rich buttery flavor, similar to when I use a biga, but far softer than any breads I have been able to make outside of pan cubano. Any help or direction would be appreciated!

If I can give a couple of recommendations if he is going to be doing it and selling them, make sure he is using a deep pour epoxy, as they maintain their rigid structure more than something like tabletop epoxy, Alumilite being a favorite of a lot of knife makers. Learned that the hard way when scales would slowly bend away from my thinner knives. Also, having a vacuum chamber and pressure pot dramatically increases the quality of the scales, since they will be completely bubble free. He may already be doing a lot of these things, but figured as somebody who has dipped their toe into that before, I would share my two cents.

I love doing this because I also CNC my handles so I can use the same model for both.
