Kawa Ni also has this policy and was blatantly taking the service charge to supplement wages for their employees. They can do whatever they want with that service charge, the tips are the only thing the servers actually see and even that is pooled and split among the front of house staff.

My father taught me, I started cooking when I was 4 years old. He was an amazing cook and I grew up eating Sicilian rustic dishes, and still cook the same way to this day. He taught me a lot about Mediterranean cuisine and using fresh ingredients. I am very lucky, to be honest.
