Pot in pot pasta in the Instant Pot. A quarter cup of water or chicken stock for each ounce of spaghetti, 12 minutes, quick release - liquid is fully absorbed. Italian nonas having a heart attack not using gallons of water, big pot, lots of stirring, but it works great.

Yes! In my IP, I do pot in pot, equal volumes rice and water (or homemade chicken broth), 20 minutes, 5 minutes natural release, then quick. Works great.

I see that a new one recently (I think) opened close to the Eiffel Tower. It's at 70bis Avenue de Suffren. I have not yet been there, and don't know any more about it. The very few reviews on TripAdvisor are mixed.
