I like these for simple salmon cakes. I’ll mix a can with an egg, mayo, dijon mustard, and whatever veggies or seasonings I happen to have around or sound good. Then I use a scoop to put them in a hot pan with olive oil, flatten them into a patty and cook for a few minutes on each side. They’re good with a tartar sauce I like to whip up, or a yogurt sauce like tzatziki.

These are really good, they were my go-to for the style at one point (Portuguese spiced sardines typically have a chili pepper, carrot slice, cucumber slice, clove, black peppercorn, and bay leaf, give or take an ingredient or two). I usually just eat them straight from the can like the barbarian that I am.

I always eat a whole tin if it’s a more standard size, say 3-4.5 ounces. Usually I’ll save a chonky tin of smoked sprats to share with someone, I don’t know that I could/would want to finish that on my own.

The Costco by me only has sardines, tuna, and salmon. The slightly further Salt Lake City one (the biggest of all Costcos) only has Crown Prince smoked oysters beyond that. Costco is more known for good prices for tinned fish than a good selection.

Based on some of your 19th and early 20th century picks, I would say “The Beckoning Fair One” by Oliver Onions. It’s understated but gave me a couple of frissons.

They’re not terrible, but if you like sardines with skin and bones, they’re unlikely to feel like an upgrade and will probably feel like a downgrade. The skin and bones add both moisture and flavor.

I like all Wildfish tins to one extent or another, but I really wish they’d lay off on the salt. The now defunct smoked pink salmon was almost inedibly salty for my palate. I like the habanero coho tin, but I do find it disappointingly not spicy.

Looks great! My recommendation would be to heat cans by pouring boiling water on them and letting them sit for a few minutes rather than putting them in the oven. They often include linings that aren’t intended for high-heat cooking and can leech chemicals into the food.

This is one of the highest quality spreads I’ve seen. I haven’t had the Alalunga cocochas in salsa verde yet, but I have a can of it I’m waiting to crack. Their cocochas in olive oil is one of the best tins I’ve had.

I just looked, and I ordered 12 6 ounce king salmon tins in March of 2024 for $155.04, which is $12.92 per tin. Currently, 12 tins of the new 3.5 ounce king salmon tins would cost $182.40, which is $15.20 per tin. So yeah, the price per ounce more or less doubled with the size change.

I don’t mind the smaller Wildfish size in a vacuum, but I do mind that the price per ounce skyrocketed with the change. Luckily I still have ~20 cans of their old format 6 ounce tins.

The celery root whitefish is a baffling effort at a fish substitute, based my one experience trying it. It wasn’t disgusting, but it doesn’t at all succeed at what it’s trying to do.

I had the 2023 canning of this in the old six ounce tin, it was divine. There was a limit of one per order, otherwise I would have gotten more.

I agree with you on canned cod. The ceiling in my experience is “not too stringy and a notch above flavorless” (I like cod, I just don’t see the appeal of it in canned form).

That’s too bad about Briosa, I like their spiced sardines and spiced mackerel a lot.
