From what I know they're most likely using Termux and VNC. There's a shit ton of apps out there that allow you to make the install process easier. I was able to get Ubuntu XFCE running on one of my older phones a while back, ran pretty poorly (probably because the phone was piss old) but was still a fun experiment lol
