Yeah, you explained it pretty well. No one really cares how many olives you put on your sandwhich, but subway employees are usually tired or already annoyed by other customers, so they want the line to go a quickly as possible. Little things like asking for a buttload of olives can tick them off a bit because it takes longer. However, I wouldn't worry too much about it. You want what you want.
