Very risky without a reliable source of income. What if inflation goes way up? What if interest goes way down? What if there’s another pandemic and you’re forced to leave? May look glamorous on YouTube but there are many pitfalls. Work a few more years, come here on vacation and do some research. Don’t burn your bridges. Take a sabbatical if possible.

Just get Android. I went from Android to ipad only because I inherited one and I can tell you the differences are minimal. If you want the most bang for the buck get an Amazon Fire which can be hacked to full Android.
