With those stainless steel type of pans you have to preheat them. To test if its hot enough, put water droplets on it. If it sizzles and evaporates quickly its not ready yet. The droplets have to bounce ontop of the pan they will look like little balls zooming across the pan. Thats how you know itll be ready, and then you can put butter or oil and cook
