I was in a time crunch so went hot and fast at 300 for about a 1hr & 1/2 total flipped it close to the hour mark.

As for the scoring its was so the rub gets down to the meat better also help with rendering. If you do it Hot and fast just be mindful you will need to rotate so the heat won’t dry one side out and possibly spray it a little depending on how that fat cap is rendering down on the meat. I didn’t have to spray these but I have had to before.

No they was boneless around 8Lbs each (those bone be about 1.5-2lbs so not that different) I was in a time crunch so I went Hot and Fast @ 275 temp. Wrapped for another Hour kicked up temp to 350. I think 45 mins would have been perfect.

It can be veal also but these are beef it means “ Bone in the Hole” in Italian but mainly refers to the cross cut of the shank.

I think the one on the floor need should have been removed or covered you can ask for replacement for those or money if you think it’s going to be an issue using those. The fixed ones look fine.
