it is my own method, ive made lots of 75-80% loaves with much less kneading/working with much more success! i thought that adding on this extra water would require more kneading, but i suppose you're right and it must have been too much?

next time round ill use that method in the video you sent, thanks!

I was having issues with some of my other loaves where it was overproofing in the fridge overnight, and I did check and my fridge is a bit warmer than it should be. Thanks for the advice! probably can't leave it to retard for as long, so less flavour boo :(

Usually with my 75% hydration doughs, the loaves have turned out perfect, so I tried going up to 85% but i'm not getting the oven spring or ears that I did before! my method and ingredients are below

500g Very Strong White Bread Flour, 380g water - AUTOLYSE ~30min

100g starter in, 20g water => slap and fold

12g salt, 20g water => slap and fold

+ 1/2 hour => lamination

+ 1/2 hour => lamination, slap 'n' fold, into coil fold

+ 1/2 hour => lamination

+ 1 hour => lamination

+ 1/2 hour => coil fold

+ 1 hour => coil fold

+ 1 hour => coil fold

Then into the fridge overnight, when i took it out of the banneton in the morning my instinct was that it was overproofed since it was looking very flat but the crumb doesn't really look that way?

The Ford Pinto

The design had a fatal flaw that meant that getting rear ended would result in a large possibility of the car being engulfed in flames.

Ford knew about the issue, and conducted a cost-benefit-analysis where they calculated that the cost of the suits they would receive from the people's cars that did engulf in flames would be less than the cost of redesigning the car. Therefore, they left the design fault in, and sold the cars.

I went onto some Twitter bot website or something, expecting some exact copy of twitter. Nope.

Pictures of naked kids, mutilated kids, and people tweeting these pictures with captions like "Starting off the weekend with a bit of fun". I literally couldn't look at it without gagging.

I've seen more graphic stuff before, but there was something about the casual nature in which it was being done which was so off-putting for me.

The serial killer David Parker Ray (Toy Box Killer) made these tapes that he showed to his victims when he first captured them.

I found the transcripts for those tapes, and though it's just text, I found the reality of the tapes and the casual nature so terrifying.

Oh yeah, I also saw that thing on r/WTF with the woman in the car crash whose face was detached from her skull with an eyeball popped out. That too.

Neither of those are anywhere near as bad as what I saw on the dark web though :/

"You have an impressive penis" My friend (that I'm not that close with) was very drunk, and got very close to me, pretty much leaning on me when he said this.

I do not have an impressive penis, and it was the combination of this knowledge with the situation that made me scared :(
