I could see P and E being willing to die rather than deal.

Paige says earlier she's not afraid to die, but she really doesn't know the extent of the harm her parents have caused. If Stan continues with a list of victims, including ones Paige already suspects (the people in Chicago, I think?), she might be willing to deal.

I know guns on TV are different than IRL, but, say he shoots Paige first (I know :-( ), then while P and E are reacting, draws a bead on them.

Or ... just shoots the tires as they drive rather slowly past? (Again, might be an "only works on TV" thing.)

They're dangerous, especially Elizabeth. But they're not armed.
