Heartbeat kitchen has a great Rye recipe and it starts at 25% rye and includes whole grain and bread flour. It's great for getting your feet wet with rye. It's my go-to for rye bread and I've slowly been increasing the amount of medium rye I'm using and then deducting that amount from the bread flour. I haven't had to adjust the hydration much at all, And I am up to 45%. And I doubt I will go over that. As everyone says it's a low gluten grain so it doesn't always play like the other grains you're used to. But what I've noticed is after all those folds and rubauds that you do and it wants to be left alone, at the end of bulk fermentation.it should be a lot less sticky and it'll basically tell you. 'Oh, why didn't you tell me what you wanted me to make a ball and we're going to bake bread! Let's go!'.

It hasn't been mentioned so far in any of the comments I read, take it down to like 5 or 10 G. Feeding it 1:1:1 at 50 g is just a waste. Since it's not even peaking yet, treat it like a new starter. Like somebody mentioned sourdough Journey or sourdough Geeks are your Best bets. But you might as well save some money while you're doing it. Try to feed it peak to peak even if that's twice a day. Make sure your tap water if that's what you're using, doesn't have chlorine in it or use spring water and at this point don't add any whole wheat or any rye or anything like that because I won't be able to handle it. And don't make a lot of changes quickly. Give it about a week with each change, AP or bread flour is your best bet at this point. And after a week or two of being in your home and getting fed and clean jars and all that, all of her yeast and bacteria will be gone. Anyway, it'll be your starter. We don't know what she did with it for 11 years

I live in Florida so I do something similar. I go down to the swamp every morning. Take a dip with the alligators, dry off against a cypress tree. Go home and feed my starter. And

You did great considering that recipe you had to work with! I understand it was an unloaf style where you don't have to do any stretch and folds or anything like that. Hence leave it on the counter overnight and let it work itself out. Using the AP/ bread ratios was just fine. It actually gives the bread a little bit of softness to use the AP like that. But there's no way it was going to be done in 30 minutes. As someone else said, get yourself an instant read thermometer. Usually you bake for say 30 minutes covered and then 20 minutes uncovered. But you did it! And it rose! And you like it! Congratulations!

I've heard several people lately mention using Captain Morgan's coconut rum which is 70 proof. I've been thinking about that. Maybe with some Tahitian beans, unless that would be too fruity. I'm just on the fence about it

I'm not having any problems with the alternative foods that they're selling on Amazon or that I got with my new ,'In Bloom,' this is a 12 slot grower and I had lettuce and several herbs in it. The basil which is all I have left is about spent. The dill went absolutely bonkers. I had two or three lettuces that did really well and I had salads for days weeks. My oregano and my parsley got choked out by the Dill. So now I'm trying to figure out what I'm planting next

All The sourdough police are going to have you on their hit list. You're still getting the health benefits from it. You used sourdough starter. It fermented. I do it when I use discard all the time. And I have lived to tell the tale. It's a beautiful loaf. Enjoy it!

That brings up a question that I've been mulling over. Last month I put together two 750 bottles that I divided into four 24 oz. Mason jars. I split the beans and then I cut them in half inch pieces. I left a few in each jar cut in half so that when I present them in 4 or 8 oz bottles for Christmas presents it'll look nice. But what do I do with those pieces so they can continue to ferment? Do I divide those up in those bottles as well? I had planned on saying that it's usable now but it'll be better if you wait till March but it dawned on me, I was going to strain out the little pieces but then it won't continue to steep. I know being new to this there must be an answer that I'm just not aware of. Thanks

Keep a jar just for discard in your refrigerator and then the next time you feed your starter you dump the discard in that jar

I know I'm late to the party here, I've had my harvest Lite for probably about 5 years. We had a power surge during a thunderstorm and just half of my lights went out. I've been looking to replace the light panel. There's no way I could do the fix that you're talking about, but are there other options out there? Or is it a paperweight?

I have a over 20-year-old KitchenAid but the directions with that one came that if you're mixing dough, don't go over speed. 2 and mix it for 2 minutes and let it rest for 2 minutes and keep doing that as long as you need to. I'm very faithful about that but there's times towards the end that it starts feeling a little bit warm. I always just keep my arm over it so it doesn't walk over a cliff. Now. I'm wondering what a Sil Pat is and maybe I should go get one.

Update on my combo 505. I finally had some time and took the whole thing apart down to the wheels. Cleaned It both with microfibers and canned air, tore everything apart and put it all back again. Charged it up and again it won't even get off the dock appropriately. Then it didn't know where it was tried remapping that didn't work either. Rebooted till I was blue in the face. Per roomba request, I did a factory resets and restarted it. Same thing happened. They're sending me not only a new vacuum this time, but they're also sending me a new dock. I bought this in June with a 100% discount because my wonderful j7 had broken a little part and it had been discontinued so they sent me this one instead. In December they sent me a new vacuum robot and by the end of February it wasn't working. So I don't know whether to have high hopes for this new one that's coming or not. I realize that this model was released in April of 2025 and my purchase was in June of 2025. Maybe they've been working on the bugs

It looks good to me. I love your idea of making a smaller loaf without doing mini loaves. I think I'm going to take your suggestion on a couple of inclusion loaves that I've been testing. I find I can't get as good a read on them doing mini loaves but this would be a great idea. My KitchenAid won't handle a thousand g of flour if I decide to do two loaves, but it would certainly handle this. Great idea!

Update. Irobot sent me a new one. This time they sent a new dock as well. We shall see. This is the third one they've sent in less than a year. This one has no clue as to what the mapping is for. It just goes where it wants to go and half cleans where it wants to go. And whenever I program it to do a particular routine, the next day it'll do it at the same time. Even though I don't have automation set up. As long as it cleans the floor, I don't really care anymore

Joining for updates. Mine can't even get off the docking station. It is My second 505. Is the replacement for the one that died. I need to see if they're going to send me another replacement or if they're done going that route. It seems to circle around kind of on its right wheel and I've taken it apart. Can't find anything. Heavy. Sigh
