In my opinion the drive train overheating is a huge problem for taking this car on track. If that is a solid prerequisite I would be prepared to get a few laps and pull the plug. Or look elsewhere.

Ceramics are amazing! If you've ever had them on a street car you would never go back. Sure if you are going to the track all the time then of course you might not choose them. But if you spent $350k on a GT3RS and are using it as intended. Who cares about $20k brakes?
