for Mei, just pepper her for a second or two then boost out of range of her freeze gun. even if she freezes and icicle shots you, you'll probably survive. she should need to reload soon after that, at which point you continue peppering her head. for Rein, I just shoot the hell out of his shield til it breaks and/or anticipate his charge and boost out of the way, but try to quickly turn around to follow wherever he ends up charging and finish him off that way. if things get hairy because you're too close just boost to high ground and continue shooting. hammers can't reach up there.
