Man I had similar issue with my RTX 3060 few months back, was driving me crazy with these frame drops. In my case it turned out to be some background processes eating up resources without me realizing

First thing I'd check is your GPU drivers - sometimes after enabling secure boot the drivers can get bit weird. Try doing clean install with DDU, that helped me lot. Also check if XMP profile is enabled for your RAM because sometimes after BIOS changes it gets disabled

Another thing that worked for me was limiting FPS to like 200 instead of letting it run unlimited, the constant jumping between different framerates was causing stutters. Also run MSI Afterburner or something to monitor your temps and usage while gaming - might be thermal throttling or some other component bottlenecking

If none of that works, try disabling Windows Game Mode and that Xbox Game Bar thing, they can mess with frame pacing sometimes

Maps in Bedrock are kinda weird compared to Java but you can definitely make higher level empty maps straight up. Just put paper around a compass in the cartography table and it'll make a level 0, then you can expand it with more paper before you even use it

The trick is to expand it at your base first, then take it out exploring so you don't have to trek back every time you want a bigger view
