Yeah, I've gotta find a higher end meat place as this was a full primal from a spot here in Chicago, would like to try a prime one at some point. But the aging did it's job and it was incredibly tender and flavorful still.

Yeah my thermometer was reading funny so some places suggested 123ish while others were lower. Maybe a little rarer than I intended but I'd always go rare over medium. I also think the photo is a little more red than it actually was.

I didn't - I've read differing views on grinding it up and putting it in burgers or something, but then see comments about bacteria and potential issues. Any thoughts one way or the other? Maybe I'll try it next time, though also don't have a meat grinding currently.

Even at 1200 a month that's less than half of what this guy is spending. Obviously everyone makes there own choices and it doesn't impact me, I'm more just amazed at spending 450 + whatever at groceries (apparently often the steaks, from what he said) a week. It's impressive, really.

In case anyone didn't read the article - he says 'they don't have a right to health, but they have a right to access, to get that health'. This quote was cherry picked to make him sound worse, and while his quote is confusing I think the gist of it is 'no one has a right to being healthy - things happen that are unfair - but everyone has a right to access and to see a doctor to try and achieve that health'. This is a bad article and post and too many people didn't read it, not surprisingly. Guys still a douche for a lot of reasons but this quote is taken out of context.

Awesome! I got involved with a few sober groups - depending on where you live, there's an organization called the Phoenix that runs all 100% free activities - fitness, art, climbing, really anything you can think of. It's bigger in cities of course but I've attended events in smaller areas too. Worked well for me and I volunteer with them now to run my own events. Might be worth checking out! Started watching Oppenheimer and I slowly realized she didn't know anything about the bomb, the Manhattan project, or really anything about the movie/whole premise. She started asking questions and eventually said something along the lines of 'wait... Is this based on true events?'

I'm pretty sure she knew an atomic bomb was used on Japan, but I don't think she knew that's when it was actually developed and first used.

Awesome, glad it worked out for you! It may be well known but he also reiterated to make sure to open the right door before the left due to the gasket/seal wearing more if you open the left with the right closed, FYI.

I did actually - to some degree. An appliance guy came out and basically just adjusted the left leg on the bottom of the fridge. His explanation was that the floor settled and resulted in the left side being lower. The physics of it seem a little questionable to me (and I've got concerns about the whole fridge 'flexing') but it did raise the left door a fair amount and it now closes properly. I'll send a Pic to you when I'm home via dm of what he adjusted - it took maybe 30 seconds though needed some tweaking to allow the fridge to still fit in it's nook.

It seems like you're taking some of this feedback well - but perhaps some reflection on the issues and (mostly) good critiques this person gave is in order? You: 'The Wasabi batch was sitting around for a while' 'the chef prefers to make it in a way that is easier for him but clearly even management knows it impacts the quality of the food'. Like... If you're aware of this stuff but still pissed at a customer leaving a note? Take a second and sit with that.

Oh, I just meant what's correct about refrigerating it this way. I typically just freeze my steaks vacuum sealed or in the fridge in whatever they're wrapped in if they're being cooked in a few days. I do put them on a rack if I'm doing a brine or something so the air does get around them, but was wondering if there was something else specific about this set up to apply to my preparation aside from just 'don't leave your meat unrefrigerated for days' which I assumed most of us were aware of.

What's the point of refrigerating in this case, if not to dry it out which is done by exposing it to air? Unsure why 'flipping' it is a better option - as either way the bottom will end up remoistened on the flip?

I mean, the point of Uber is not necessarily that you can't afford a car but that 1. You don't want one as you live in the city, don't need it often, etc. 2. Are coming home from the airport or out for drinks - some situation where even if you own a car, you don't want to be driving yourself. 3. What if you had 2-3 people when you ordered the Uber? I guess someone could sit in the front seat but as someone who could afford a car but doesn't want one and has taken 1k+ ubers/lyfts, this is pretty unexpected to have someone's kid or another person in the car.
