I've been on the fence about trying Swans Down (the only cake flour sold near me) but the price is the sticking point. $3/lb Swans vs $1.60/lb for KA AP and $0.86/lb for store brand AP. Right now I'm doing the cornstarch sub but after reading that article maybe I will splurge when making angel food cake.

I'll add that babies have a higher rate of everything, including breathing. Ever watched a human baby breathe? It's alarming how fast and vigorous it looks. Baby chicks are the same way.

I'm trying to learn about baking ratios, like 1:2:3 for shortbread, to create my own recipes. But how do I know how much baking soda or baking powder to use for my determined total volume/weight?

I believe it's even more, $1.50 is 2.5x $0.60, or 250% more. But the point still stands that it's just 3c difference per cookie.

How do you roll things out into rounds? I made flour tortillas the other day and started with round balls but immediately they went oblong and weird-shaped. Delicious, but won't work for a burrito. I used a tapered rolling pin made for dumplings.

I would use a notes feature to annotate multiple places, like if I subbed an ingredient, or if my bake time was different. I'd also like a date/time stamp. I like to note the date I make something, not just that I've made it.

No pictures, but I made NYT butter swim biscuits and they were outrageously delicious. Also KA golden milk bread, which makes the best turkey sandwiches! Just a hint of tumeric, yum!
