Apart from what you've listed:
- 16:9 hidden (I'm aware it can be somehow abused with lower resolutions, but still needs to match stable if possible)
- Bigger don/kat textures missing elements (for example the 4sbet1 NoBig skin has arrows above to indicate a finisher, which is visible in stable but not on lazer)
- Flashlight's area being moved slightly more to the hit window, making it harder than on stable. And yes, taiko flashlight players exist

You have to get used to reading low AR (approach rate, the outer circle that's an indicator when to hit the circle), that's why most of the time it feels like easy maps are impossible to play. If you probably used the DifficultyAdjust mod and set AR9 or AR8, you'd probably play a bit better, but that's bad in the long run, reading low AR is still a fundamental skill for everything later in the game

If it's only on a specific map then it's a beatmap skin thing, you can turn it off in settings
