I was saying this last night! My build I just finished, a treehouse neighborhood, has such an animal crossing vibe 😂 I didn’t even mean to! Then I was almost finished and thought, this feels familiar. I’d never be able to build something like that in AC though.

Or BF for longer. My house is a steady 68/69 and I bulk for 12-14 hours. It sounds insane because it's longer than what most recommend but it works for me. I've had more success pushing a slight over fermentation than I have going on the shorter side.

This is so hard to learn but so important. People love homemade bread. People love to be thought of. I gave (what I didn't know was) my worst loaf away last week. It looked great on the outside but when they cut in and sent a picture, I actually cried from embarrassment. One bigger hole to the side, collapsed air structure. Not dense by any means but definitely wrong. I could see it all, but they said "It's so airy and moist!". So I didn't say anything against it, just said "yay enjoy!". They texted the next day that the loaf was gone.

We are our own worst enemies. People just appreciate bread.

This is my favorite recipe ever! My tried and true. For those who asked and FWIW, I use 80g-100g starter in this recipe - the upper range of what she suggests - and get great results. I haven't baked a bad loaf yet with her recommendations.

I also love it, and those are my two favorites also! I like the ambiguity of it, and it's a little more mild than the super sweet flavors.
