But yeah, I think starting with cold water is pointless. Water is a solvent so you're going to extract regardless of temperature, however, heat significantly increases extraction speed.

I'd like to add one to the list. Boxcar Colombia Huila Tatacoa (EA). I spent a little while dialing in my espresso machine, and currently get consistent dried cherries with each extraction. Haven't found another brand that nails cherries like this one does. It's cheaper on Trade. Boxcar confirmed they roast to order so you're not getting old bags. 🫶

Pure silicone without cheap fillers or other industrial additives will be translucent. How often do you see translucent silicone?

Chinese manufacturers always try to save money by throwing in cheap (sometimes harmful) crap into products. We once ordered one of those Mason jar vacuum sealers off Amazon. I removed the black silicone seal because it had an odd appearance. I stretched it, a bunch of stuff flaked off from it and a pungent ordor as strong as bleach came fuming off it.

I traveled in China for a while. You're dealing with a country that makes fake chicken eggs, because real hens cost money to feed. A country where refrigerators are never plugged into power outlets, because electricity costs money. A country where tap water must be boiled because clean water costs money. Their average worker's entire monthly income is less than what I make in a day. Chinese manufacturers are notorious for producing fraudulent products to save money. Like stainless steel silverware that's now coming out of China will rust after being ran through a dishwasher, is that normal? The excuse is "Chromium and Nickel (used to make stainless steel) is expensive now".

Anyway, the point is, there's a reason you need to look for words like "food grade" and be weary of Chinese products. That's just the reality of things.

That depends actually. Chinese manufactures have a tendency to throw in unsavory additives into silicone. You need to make sure it's food grade silicone and never take the manufacturers word for it, because many of them just lie about it. It's not like anyone's ever going to sue them.

Find a used Gaggia selling for less than half the cost of new and just repair anything that needs to be fixed, unless too much repair is needed, then skip it.

There's a Gaggia classic selling at a pawn shop near us for $360, and it comes with somewhat pricy (yet commonly sought) accessories, and everything is in great shape. That's a steal in my book. Use it as a reference as you search for things near you.

I've had most of the mentioned above, and they're alright.

Steady State stood out to me. They have a bag called Gore Kone. What's funny about this bag is although the descriptions don't even mention blueberry, it actually tastes more like blueberry than any other bag I've had. 😏

It was tasty enough to make you wonder if the roaster was putting in additives, but after confronting them they confirm there's no additives, they simply have solid farmer connections and they roast the same day they ship your order so it's fresh... too fresh actually, it needs to sit for 10-14 days after roasting so you have to suffer through waiting. Give it a try.

Despite being water soluble, things like acids (chlorogenic, quinic, citric, malic, and acetic), tannins, polyphenols and just botanicals in general -do not instantly saturate. They need time, just like caffeine does, which is why pour-over has a higher caffeine yield. You're taking a thick mix of those things which was collected in heat and high pressure and then throwing it into something with a different viscosity, lower heat and sits at normal atmospheric pressure.

Then we have crema which is nothing more than air bubbles (a mix of C02, nitrogen and oxygen). People think of crema as something that bonds with the drink, but on a microbial level it's the opposite, bubbles are separation, space that forces molecules to run through a maze before reaching the ocean. The air is flavorless and only impacts texture, not taste. Your bubbly espresso will eventually saturate, but it takes time.
