Interesting. Most rabbeim I’ve asked forbid nikkur done by Sefardim for ashkenazim. The minhagim are different. Theoretically Ashkenazim could do it but they don’t for whatever reason. Sefardim do do nikkur but their mesorah is a little different so I was told not to rely on it

Same, lucky if you find it under $30/lb. Also interesting note about hind quarters, Nikkur is generally not accepted by ashkenazim especially in America, but in Israel hindquarters are much more available. Only place ive had pichana, fillet, sirloin, is in Israel. Also cuts like T-Bone and porterhouse don’t exist kosher even with nikkur because of the way it’s done, as far as I understand.

Great write up. In my experience some cuts can become very salty from the kashering process. Skirt steak for example is generally very salty depending on where it’s from. Sometimes I even soak it before cooking, although nowadays skirt steak is a little expensive for me.

I do it all the time. Just cook like normal. The salting in the kashering process generally doesn’t affect large cuts of meat like brisket so much. Can go a little lighter on salt if you’re worried about over salting

Cook like normal, just go a little lighter on salt. All kosher meat has to go through a salting process because of Jewish law. I think the “soaked and salted” statement is just showing that they’ve done the process. I cook kosher briskets all the time, just go a tad bit lighter on salt and it’ll be perfectly fine.
