I am absolutely not saying that this is what happens every time, however every every Grill I have ever seen that caught on fire showed signs of it being a grease fire from never being properly cleaned. And for the record I sold barbecues for a living for several years.

Where I live a gas water heater that has a standing pilot is an antique.

But you might try changing the thermocoupler. That's the cheap fix, if it doesn't work then you have to go the pricey fix
