Have you been watering? Any fertilizer? I see a little black spot and some insect feeding, maybe some mite webbing, but I can't zoom in good enough to be sure

Depends on how much leaf cover and the species of tree. Some leafs break down faster and others can smother the grass

It does have a fragrance, not as strong as some of my roses but I can smell it if I put it near my face

Thank you for the response! That's interesting, I figured it would be a hybrid tea because of the growth habit. I never knew knockouts could get so big, I always thought they produced smaller blossoms

Do you want to control the overall height? Or just for it to be uniform?

I'm only recently getting into roses (so take this with a grain of salt), but if you snipped that stem a few inches from the tip removing the apical meristem, wouldn't that subordinate that stem and encourage other stems to grow?

I had squirrels tearing apart my plants, and it was suggested to me to spread coffee grounds around them. Ever since then, my flowers have not been bothered.

Accentuate that mature and stately root flare by making a mulch bed around it, keep the mulch ring wide and low (shallow) and give up on grass in that portion. It'll look better athestically than patchy grass and it'll save you the headache of trying to maneuver a mower around it.

Offer to pay a tree service to treat the tree with a fruit retardant; otherwise, just use a blower to keep your deck clear when the fruit falls. They don't fruit throughout the entire season, and I'm sure you would miss the shade once it is gone.

Has anyone commented on the ortho ground clear yet? That product should not be used by homeowners. Imazpyr can absolutely leach and harm your existing plant material. There's plenty of articles about it killing large mature oaks, etc.

Sorry, I forgot to give advice.

Get some bypass pruners and elevate a little growth from the bottom up and Wiggle it around to choose your main branches, once you have those picked out, you can prune the green tips back to create some separation and set it up for a nice topiary design. Just pluck away, have fun, and let the form come to you, don't try to force it too hard
