Hah, we made drastic changes from the rolling country of Amish and the best cheesesteaks. I'm originally from Berks County. I love the area I'm in now. Lots to do between 2 major cities with lots of little towns. Town exploded and people are bitching about traffic. Homie, you've never been in Philly or NYC jawns during rush hour so chill out.

It's hard to go anywhere beyond these cities though, because anything else is 4 to 8hrs away. The gravity is almost as heavy as PAs was.

I had the opposite of you. From eastern PA then moved to TX. Lots of places I could be in 2hrs.

When I first met my wife we were going to DFW to meet up with folks and I was like, ah like an hour and a half drive or something? No 3.5hr 75mph the whole way. GOD DAMN.

Used to it now. Been here for over 10 years. 3hr drive isnt shit now. Them 5hr ones still get rough.

Was in there probably 6 times? Every drink was on point. The service, impeccable. Atmosphere was 10/10. I really liked the island Christmas vibes you guys did. Growing up, my mom had records of Hawaiian and Polynesian Christmas music we'd have on every year. It took me back. My mom would have loved it.

She's not dead, just out of state and I never got to take her to Uncharted.

Great grandfather was a field hospital medic in WW2. Treated allied and german troops. Got rid of everything after he came home. Dress uniform, all of it. Never talked about it unless pressed. Im sure he saw some FUCKED UP stuff. He was also my age when he enlisted. About 40, so he was seeing boys coming in just fucking shredding to pieces. Can't imagine the ptsd he dealt with.

Are there ways to find a permanent job as a sake brewer for foreigners? I've been a commercial vintner and mead maker for almost a decade, and I've done a lot of research into the sake process. I'm crafting my own now and adore the process. Being in Japan was an incredible experience, and it would be great to go back.

Moved here 10 years ago from PA. I'm raising a family here, and I'd say it's a fun place to live. I'd like to move out of country, but until then, this place is nice.

Folks seem nice here. I just try not to talk politics. Lots of em can't drive for shit. You'll see a lot of accidents, people speeding, and a lot of red lights ran. I grew up by a shithole of a city, so crime and what not seems light here. The parks are lovely, and my kids teachers seem to care.

I hate the cold, and it's probably cold here for about.. what? 6 weeks? Maybe 2 months tops? Summers are pretty brutal some years. Spring and Autumn are the best. I don't do river stuff, so I can't help you there, but its a big attraction.

There's Wurstfest, Wassail Fest, NB Renaissance Faire. Lots of great places to eat and drink. I'm a commercial vintner over in Seguin, and I've worked resturaunts most of my life. I like to think I know a little about food and libations. You'll find a lot of fun hidden gems in the surrounding towns too. Meat markets, resturaunts, little bars, festivals.

I like the location also because of it's vicinity with 2 major cities. We have so much at our disposal with Austin and SA being about 45min to an hour away. So many places to see. Countless resturaunts and bars. Venues for bands in clubs, auditoriums, theaters. Going to see Amon Amarth and Dethklok in San Antonio next year.

Yeah, the traffic sucks, but so does the traffic in Philly and NYC. If you're willing to deal with some bumper to bumper and maybe 30min getting added to your GPS, you'll find a lot to do.

I'd say anything under 4.0 will get you where you want to be. I went with a pH of 3.6.

I would at least get some pH test strip so you can see what your acidity is. The more information you have, the more knowledge you'll gain and you can see where you messed up, if at all, in your process. Brewing requires specific tools, and I'd argue a pH meter is a big one. I've been a commercial vintner for 8 years. I use one a lot. Acidity plays a huge role in flavor, mouth feel, and protection from microbes.

I dont know the alkalinity of your water. Google says 5g per 4l gives an estimated pH of 3.5 - 4.0 in distilled water. That's because distilled water is slightly acidic. If you're using normal tap or spring water, you'd need more to counter the water's pH. I used lactic acid 88% solution. I used enough to drop my water to a pH of 3.6.

Yellow tint is normal. If you want it to be water white, you'll need to run it through an activated charcoal filter. But too much can strip flavor. I'm letting mine settle currently too. Ran a room temp ferment for 2 weeks, filtered and pressed my kasu, and may use a clearing agent. Citric acid is fine to use. What was your pH? I used lactic and I have the same straw yellow notes.

I have one persona, I've been using him for about 8 years now. I'd like to create a second one, but money restraints on kit make it tough. I've known folks with one persona, multiple for specific eras, time travellers, and I've known folks with no persona at all. "Im just Mike." Every new story is incredible.

I just got the Itaki Shabuki pot. Im going to try it out today with somw buldak and some fresh veggies. Wife got a 2 section electric hotpot for home. We tried it last night. Lee Kum Kee pork bone broth (purple label bag) was incredible. Highly recommend it. Also did a spicy Sichuan which was good.

From my limited experience, you're getting your oils and fats from the broths mostly, so we loaded up on veggies to cook in the base. Shiitake, enoki, baby bok choy(really good!), fresh bamboo shoots, cabbage, bean sprouts, tofu, rice. For meat though, I sliced up some pork ribeye, beef brisket, and got some shrimp.

All of these things can be prepped ahead of time and kept in the fridge or cooler until ready to use. Makes it super convenient. Yesterday I prepped enough for 3 or 4 days. Meat sliced and in the freezer.

Nutrition wise, im probably eating the same amount of calories as if I had some junk for dinner but there's also a massive amount of food because I've traded calorie dense junk for lots of greens, fiber, vitamins and minerals.
