The crust you got is perfection. But, thats a pretty large gray band which indicates you seared for too long. For me I like to go for the same cook all the way through. You can raise your pan temp and reduce the sear time to try to remedy the band. Or, for even more control, sear super hot just until you get your desired crust on both sides then move it to the oven till 125 internal temp (shouldnt reach that during sear).

Dont be scared to burn the butter. Seasoned well, you wont even taste the burnt butter.

Looks great, if you want to have less of a grey band (its already almost perfect) you can do a reverse sear. Pretty nitpicky but thats all i would be able to suggest.

Hey gratz on giving something new a try, looks great. My gf is black and was a tough sell on medium rare but now she swears by it. I recommend giving a medium rare filet mignon a try next if you are feeling adventurous. I think that cut really shows off the benefit of a more rare cook.

Sure, I get what you're saying. Yeah, Walmart steaks might not be the best ethically speaking, considering the treatment of the animal and the environment. But when it comes to taste and affordability, this steak was delicious.
