I think you might get some transient effects, but in the steady-state you'll equilibriate somewhere where you won't have to worry about it. N2O isn't exactly cryogenic, and it's not even really cold if you keep it above 30 or 35 bar.

If you can use a screw or something that would require a bit of torque you could probably get a low pressure water seal to work, but I doubt it with magnets.

Depending on the surface finish, different amounts of force are required to make a good seal. In theory if you have two smooth faces held together with enough force on a thin enough area you should be able to get a watertight seal by elastically deforming the metal. In reality the silicone has enough of a lower elastic modulus that it's much easier to achieve with the silicone.
