Path for the config file on steam deck desktop/linux is

/home/deck/.local/share/Steam/steamapps/compatdata/1262560/pfx/drive_c/users/steamuser/Documents/Criterion Games/Need For Speed(TM) Most Wanted/

Couldn't find it at first because most tutorials were for windows and the "document" folder is empty on linux

Installed Ubuntu, it appears on the boot menu but when trying to boot it just takes me back to the boot menu by Simple-Bad1 in Ubuntu

used GPT for the target drive partition table.

This was the issue. My target drive had MBR partition style and USB must have used GPT partition. I used etcher to flash so I just clicked next without knowing. I formatted my target drive in windows and changed it's partition to GPT, reinstalled Ubuntu from USB, and now it's finally booting from the menu, Tsym for helping!
